Turkey Pot Pie Squares


If you are like me, you can only have turkey from Thanksgiving for a few days before you are tired of it. We made this for dinner yesterday with the last of the turkey we had leftover. This is quick and easy, using mostly ingredients that you may already have in your house. It was warm, creamy and would be great for a cold night.


Turkey Pot Pie Squares

Ingredients:
2 Cups Shredded / Pulled Roasted Turkey or Chicken
10oz Frozen Mixed Vegetables
1 Medium Onion - Diced
1/2 cup Skim Milk
1 Tbsp Vegetable Oil
1 Can Campbell's Healthy Request or 98% Fat Free Cream of Chicken Soup
1 Sheet of Frozen Puff Pastry - Defrosted and Split into 6 squares
Dash of Pepper
After the puff pastry sheet has fully defrosted, use a pizza slicer to cut the sheet into 6 seperate squares. Spray a baking sheet with Pam Spray and bake the puff pastry squares in the oven @ 400 F for 12-15 minutes or until they are golden brown. This can be done ahead of time or while you are cooking the vegetables. Once they are done, cool them on a baking rack. When they are cool divide each square into a top & bottom.
Put the tablespoon of vegetable oil in a pan and place on medium heat. Add diced onion and cook a few minutes or until the onions turn opaque. Add the frozen mixed vegetables to the onions.
Next add the can of soup as well as the milk and mix into the vegetables well. Let it cook for 2 minutes and it will begin to thicken. Laslty add the turkey pieces and cook 5 minutes so the turkey has time to reheat. Stir constantly so it doesn't stick, as it bubbles. Season with a little pepper. Serve a few heaping spoonfuls in between the puff pastry square.
