Apple Cider Vinaigrette & Mixed Green Salad


This recipe is a family original. My Grandma Seib makes this dressing and salad often when we visit for dinner. I asked for the recipe a few years ago and have been making it ever since. We almost always have this dressing on hand in our house. Recently, I had my entire Women's Basketball team over for dinner in between semesters to give them a home cooked meal and a break from take out food since the Cafeteria isn't open during break. I served this salad to them and it was recived with rave reviews, each and every one of the girls loved it!!

Ingredients for Dressing:
1 Cup Light Extra Virgin Olive Oil
2/3 Cup Dark Apple Cider Vinegaar
1 Cup Sugar
1 Tbsp Worcestershire Sauce

Ingredients for Salad:
1 Bag Mixed Greens
14oz Can of Mandarin Orange in Water
1 Cup White Raisins
2/3 Cup Slivered Almonds

Just a quick note this dressing should be made a day before you intend on using it. In a container with a top such as a mason jar or salad dressing tupperware begin putting together your dressing ingredients. Start with pouring the apple cider vinegar in and then the olive oil. They will seperate making two different levels.
Next you can add the Worcestershire Sauce and lastly the sugar.They will continue to seperate making their own level with in the container. With a spoon or a whisk mix the dressing for 30-45 seconds and everything will combine together nicely. Continue to mix or shake up the dressing for a few seconds once in awhile during the first 24 hours. Since it takes us awhile to use the entire container of dressing after the first usage I store it in the fridge. This hardens the olive oil but if I know we are going to use it I take it out of the fridge about two hours before hand to let the olive oil sofen. Always give the dressing a couple of quick stirs before drizzling it on this or any other salad.
I tripled the amount of salad ingredients to feed all of my basketball girls but if you are making it for 2-4 people the amount I put above should suffice.  Start by putting the greens in a bowl, top with oranges, raisins and almonds. Give it a few good tosses and serve with the dressing. I often top this salad with a piece of grilled chicken and it turns into the perfect lunch or light dinner.
