Guinness Stew


First I want to wish Happy 30th Birthday to my oldest daughter Nicole.  She is working all day today but we will get to celebrate her birthday with her tomorrow.  We love you!!

There are at least three things I can never see myself drinking ever - peppermint schnapps, coffee and beer.  Because of not liking the smell, taste or foaminess of beer I did not think I would like this dish.  But boy was I wrong.  The combination of the beef broth, red wine and dark beer give the gravy a deep delicious flavor.  If you are looking for a different St. Patrick's Day meal instead of the usual corn beef and cabbage this is one you should try.  This recipe is from www.mybakingaddiction.com.


Ingredients:
3 tbsp vegetable oil
1/4 cup all purpose flour
2 lbs boneless chuck roast, trimmed and cut into 1-inch cubes
salt and pepper to taste
1 large onion, chopped
2 cloves garlic, minced
3 tbsp tomato paste
4 cups beef broth
3/4 cup red wine
2 tbsp A-1 steak sauce
1 bottle Guinness Stout
5 carrots, peeled and chopped
4 large Idaho potatoes, peeled and chopped

Directions:
Heat oil in dutch oven over medium high heat.  Place flour in a medium bowl.  Sprinkle beef with salt and pepper.  Dredge beef in flour.  Add half the beef to the pan and cook for 5 minutes, turning to brown on all sides.  Remove beef from pan with a slotted spoon and repeat with remainder of beef.




Add onion to pan and cook for 5 minutes stirring occasionally.  Add in garlic.  Stir for one minute.  Stir in tomato paste and cook for 1 minute, stirring constantly.


Stir in beef broth, wine, A-1 sauce and beer, scraping the bottom of the pan to loosen browned bits.

Return meat to dutch oven and bring to a boil.  Cover, reduce heat and simmer 1 hour, stirring occasionally. Uncover and add carrots and potatoes.  Bring to a boil.  Cover, reduce to low and simmer 45-60 minutes or until meat and vegetables are tender.  This serves 8.
