Hawaiian Slow Cooker Pulled Pork


This is a great summer dish that you can make before going to the beach for the day.  I am never in the mood to cook a big meal after laying in the sun all day but everyone is usually hungry when we get home.  So you can get this together before you leave and everything will be ready when its time to eat.  And when you make it in the slow cooker it keeps the kitchen cooler than having to put the oven on. The weather is supposed to be beautiful in NJ all weekend so I plan on enjoying it.  


Ingredients:
1- 3.5 lb. pork shoulder
1 large onion, chopped
1 tbsp paprika
1 tsp black pepper
1 6 oz can tomato paste
1 cup pineapple juice
1/4 cup soy sauce
1/4 cup teriyaki sauce
1/2 cup brown sugar
1 tsp grated ginger


Add all ingredients but pork to slow cooker.  Add pork.  Turn slow cooker on low and cook for 8 hours, or until pork is falling apart.


Break up or shred pork with two forks.  Sauce should be fairly thick.  If sauce is still too thin, turn crock pot back up to high until sauce thickens.


Serve on rolls.  I can't find the source of this recipe.  I printed the recipe out last year and can't find it online anywhere.
