Chocolate Dream Cookies
Chocolate lovers I promise you this is your cookie. It tastes like you are eating a chocolate candy bar or a rich brownie. Its that good. Adding the chocolate chips makes it even better. This recipe is adapted from The Back In The Day Bakery Cookbook.
Ingredients:
1-1/4 cup unbleached all-purpose flour
1 tsp baking powder
1/8 tsp sea salt
4 large eggs at room temperature
1-3/4 cups light brown sugar
2 tsp vanilla extract
1 tsp espresso powder or finely ground coffee
1 pound bittersweet chocolate, chopped
8 tbsp unsalted butter (1 stick)
1 cup semisweet chocolate chips
Directions:
Preheat oven to 350 degrees. Line two cookie sheets with parchment paper.
In a medium bowl, whisk together the flour, baking powder and salt. Set aside.
In a medium bowl, whisk the eggs, brown sugar, vanilla and finely ground coffee together. Set aside.
Put the butter and bittersweet chocolate in a large heatproof bowl.
Heat on the melt setting (very low) in the microwave until both are melted about 2 minutes. Stir and set aside to cool until warm but not hot.
Add the egg mixture to the cooled chocolate mixture, stirring until thoroughly combined. Stir in the flour mixture, then fold in the chocolate chips.
You will want to eat this batter from the bowl but instead use a small ice cream scoop to form the cookies, about 1 rounded tablespoon each and place on the prepared cookie sheets, leaving 2 inches between cookies to allow for spreading. Bake for 9-11 minutes. The surface of the cookies should look dry and set but the centers will still be gooey. Let the cookies cool on a wire rack. Store in an airtight container for up to 3 days at room temperature.
