We have really been enjoying our fresh produce box from Alan's Orchard this summer. With a huge variety of options every week its really forces John and I to taste and enjoy so many different fruits and vegetables we wouldn't normally have in the house. After just about 3 months in the program I now understand why local produce is so much better than what you get at the food store. We had so many peaches that were ripe from the fresh box, I didn't want to waste them so this cobbler was a great way to use up the extra fruit. The blackberries were locally grown as well from our trip to The Berry Farm at Colts Neck.
Ingredients:
6 Peaches - Sliced (Not too ripe)
1 - 1 1/4 Cup Blackberries
11/4 Cup + 1 Tbsp Flour
3 Tbsp Honey
1 Tbsp Lemon Juice
1/2 Cup Heavy Cream
1/3 Cup Sour Cream
1 Tsp Baking Powder
1/4 Tsp Baking Soda
4 Tbsp I Can't Believe it's Not Butter - Cut into small pieces
1/4 Cup + 2-3 Tbsp Sugar
Pinch of Salt
Pam Spray

Start by preheating your oven to 375 F. Wash and slice your peaches, cut them in half, discard the pit and then cut each half into 3 slices. Arrange both fruits in a shallow 2 quart baking dish that has been sprayed with Pam. Sprinkle the fruit with 1 Tbsp of Flour and toss well to coat evenly. Add the lemon juice and honey to the coated fruit. Stir to combine everything together and set aside.
In a large bowl combine the remaining flour, 1/4 cup of sugar, baking powder, baking soda and salt. Add the butter into the dry ingredient, rubbing the butter with your fingertips into the flour until the mixture resembles coarse crumbs.
In a small bowl combine the two creams. Using a fork stir the cream mixture into the dry ingredients with the butter. It should be sticky, thick and clumpy.
Drop spoonfuls of the batter on top of the fruit, leaving gaps to expose some of the fruit underneath. Sprinkle 2-3 Tbsp of sugar on top of the batter. Bake for 35 minutes or until the batter has browned and the fruit is bubbling.
Let it stand about 5 minutes. Although you can eat it alone I highly recommend either vanilla ice cream or whipped cream. If you are making your own whipped cream this is the time. In your stand mixer bowl fitted with the whisk attachment, whip 1 cup of Heavy Cream with 1 1/2 Tbsp sugar. Whisk for about 2 minutes until soft peaks are formed. Serve warm.
