Chocolate Zucchini Cake
I have been busy watching the Olympics this weekend like almost everyone else in the world. My three favorite events so far are the women's beach volleyball with Misty May-Treanor and Kerri Walsh Jennings, the women's indoor volleyball with Destinee Hooker and her teammates and any swimming event that the always smiling Missy Franklin is in. I loved watching strong, confident women winning for the USA while eating this unbelievable chocolate cake.
Even though this cake has zucchini and applesauce in it, unfortunately I don't think it really qualifies as being a healthy dessert. It is though a moist, delicious dessert. This cake could also just have confectioners sugar sprinkled over it, but what fun would that be. If you are looking for something different to make with all your zucchinis give this a try. Ingredients:
3 medium zucchinis, grated (about 3 cups)
7 tbsp cocoa powder
2 tbsp butter, softened
3 eggs
2 cups sugar
1-1/2 cups applesauce
1 tbsp vanilla extract
2 cups flour
1 tsp baking soda
1/2 tsp salt
1/2 tsp cinnamon
1 cup semi-sweet chocolate chips
Directions:
Preheat oven to 350 degrees. Grate the zucchinis.
Combine the sugar, eggs, applesauce, zucchini, butter, and vanilla in a large bowl.
Combine the chocolate chips with a tablespoon of flour so they don't sink to the bottom of the batter. Stir in the flour, baking soda, salt, cinnamon, cocoa powder, and chocolate chips. Stir until all ingredients are thoroughly combined. Pour the batter into a well greased bundt pan. Bake for 60-70 minutes or until an inserted toothpick comes out clean. Let the cake cool for 10 minutes and then tilt over onto a plate.
Glaze ingredients:
3/4 cup semisweet chocolate chips
3 tbsp butter
1 tbsp light corn syrup
1/2 tsp vanilla extract
Directions:
Combine butter, chocolate chips, corn syrup and vanilla in a microwave safe measuring cup. Heat a low power setting in 30 second intervals until nicely melted, stirring in between. Pour over the cake when it has cooled.

ReplyDeleteI think any dessert that has zucchini and applesauce can be considered healthy:-) At least that's what I keep telling myself! I love that you went with the chocolate topping over the powdered sugar...best to always opt for more chocolate!!! LOL! Thank you so much for sharing on Trick or Treat Tuesday!!!
