Jalapeno Popper Grilled Cheese


This grilled cheese sandwich is amazing, in fact my mouth is watering just thinking about it. If you enjoy jalapeno poppers you will love this adult version of grilled cheese. It's a quick and easy meal with only a few ingredients. The flavors when combined together are out of this world, you have the spicy jalapeno which is tuned down by the creamy cheeses, the bacon gives a salty element and the bread is crisp and buttery. Perfection! Make yourself one today!

Ingredients:
8oz Cream Cheese
Loaf of Sourdough Bread
Bacon - Crispy (2 slices per sandwich)
Jalapeno Peppers - Charred (2 peppers per sandwich)
Sargento Thin Sliced - Colby Jack Cheese (3 slices per sandwich)

Start by prepping your grill and putting it to medium heat. Wash and place the whole peppers right on the grill. Close the top and allow the peppers to char about 2-3 minutes, then turn the peppers and give them another 2-3 minutes on the other side.
When the peppers have grill marks or burnt skins carefully take them off of the grill the place them in a plastic bag. This will help steam the peppers, making it easier for you to take the skins off later. Let the peppers sit in a sealed bag for about 8 minutes until they are cool enough to handle.
Now you can start getting your sandwiches together. Cook your bacon until crispy, I used the microwave this time to reduce time and clean up. Take two pieces of bread and spread cream cheese on both slices on the inside. Place two pieces of cheese on one side and one on the other.
Using your hands, peel the charred skin off of the jalapeno pepper, cut the top off the pepper and slice it down the middle opening it up entirely. Take out all of the seeds and ribs of the pepper. Place 2 of the cleaned peppers and two of the crispy slices of bacon on top of the cheese slices and cream cheese.
Spread whatever margarine or butter product you use on one side of the sandwich. In a large flat pan over medium heat, place the buttered side of the sandwiches down on the pan. While the one side is cooking, spread your margarine or butter product on the other side of the bread. Wait about 3 minutes and when the cheese begins to ooze and the bread is golden brown and crispy, flip the sandwiches over.
Cook about another 3 minutes on the 2nd side of the sandwich. Take them off of the heat and slice them in half. Wait about a minute or two so the cheese doesn't burn your mouth.
