Apple Pie Bars


I made these Apple Pie Bars for our Halloween party this past Saturday. These bars are a hand held alternative way to enjoy traditional apple pie. Because I was pressed for time and making lots of other food I chose to buy pre-made pie dough but if you'd like you can obviously make your dough from scratch. I'm so glad we have a few of them leftover to eat ourselves as we stay indoors anxiously awaiting Hurricane Sandy which is set to hit NJ in just a few hours. Ingredients:
2 Boxes of Pre-made Pie Dough
2 lbs of Apples (About 6) - Peeled, Cored, Sliced and Diced
2 1/2 Tbsp Orange Juice
1 Tsp + 1/2 Vanilla Extract
1/2 Cup + 1 Tbsp Sugar
1/2 Cup Flour
1/3 Cup Light Brown Sugar 
1/4 Tsp Nutmeg
1 1/4 Tsp  + 1/4 Tsp Cinnamon
1 Egg White - Beaten
1 Cup Powdered Sugar
2 Tbsp Skim Milk

Preheat the oven to 350 F. In an ungreased 9 x 13 inch baking dish lay down your pre-made or home made pie dough. If you are using the pre-made dough they are round in shape so you'll need to overlap them and trim the dough so it sits flat in the pan. Press down on the seem between the two sheets of dough so they are molded together. 
Wash, peel, core and slice all of your apples. I used 4 in total, 2 large and 2 medium sized ones. Once they are all sliced you can dice them into small pieces. Place the diced apples in a bowl, pour in the orange juice and 1 Tsp of vanilla extract, toss to coat all of the apples in the mixture. Set aside.
In a separate bowl combine the flour, 1/2 cup of sugar, brown sugar, 1 1/4 Tsp of cinnamon and the nutmeg. Whisk all of the dry ingredients together.
Pour the dry ingredients into the bowl with the apple mixture. Using your hands, toss the apples so they are completely coated in the sugar/flour mixture and lay them down in an even layer on top of the pie dough in the pan.
Lay the 2nd layer of pie dough over top of the apples. Trimming the edges and pressing down on the seem like you did in the beginning.  Put one egg white in a small bowl and whisk until it is foamy. Brush the egg white over the top of the dough. Sprinkle the remaining sugar and cinnamon evenly over top of the moist dough.
 Bake the bars for 50 minutes until the dough is golden brown and the apples are tender when pricked with a toothpick. While the bars are cooling you can make the vanilla glaze.
In a mixing bowl combine the powdered sugar, milk and remaining vanilla on a high speed until you get the desired consistency  If it's too thick add more milk, if it's too thin add more powdered sugar. Drizzle the glaze over the top of the baked bars using a spoon, be sure to cover the whole pan. Allow to cool for a full 30 minutes before slicing. Serve bars warm or room temperature and store them in the fridge

  9. These bars are a hit! I made them to take to work today, and the whole pan disappeared! I just took a pan out of them out of the oven for us to enjoy over the weekend!
