Chocolate Sprinkle Sandwich Cookies




It's hard to watch TV, read the newspaper, or look at the internet without seeing more developments in the heartbreaking story that happened on Friday in Connecticut.  As silly as baking cookies seems when 20 families are burying their first grade children this week, and 6 other families are burying their loved ones, I will be keeping all of the families in my thoughts and prayers no matter what I may be doing.  It's hard not to feel sad during this happy time of year.

Sam came home this weekend to celebrate her father's birthday and bake a few cookies before her taking her last four exams this week. She pinned these to make and I had also had these as one of my choices so it was easy to decide on what we were baking.  Usually when both of us have to make a choice of some kind it takes us a while to come to a decision. These were on www.sixsistersstuff.com recently but were originally from www.sprinklebakes.com.  Who doesn't love sprinkles or jimmies as we used to call them?  This is not a recipe that makes a lot since they are sandwiches so if you want more than 20 sandwiches double your batch.

Ingredients:
2/3 cup butter (softened)
1/2 cup sugar
1/4 cup cocoa
1/4 tsp baking soda
1/8 tsp salt
1 large egg
1 tsp vanilla
1-1/4 cups flour
1 cup sprinkles

Directions:
Heat oven to 375 degrees.  In a bowl beat butter until creamy.  Add sugar, cocoa, baking soda and salt.  Mix well until combined.  Mix in egg and vanilla.  Add flour.  Dough should not be sticky.  If it is add a little more flour and mix.


Fill a small bowl with red/green sprinkles.  Roll dough into a 1" ball and then roll in the sprinkles until completely coated.


The cookies blend into the bowl but there are two balls in the picture above.  Place on cookie sheet and refrigerate for 15 minutes before baking.  Bake for 7-9 minutes.  Don't overcook as you don't want the tops to crack.  Take off cookie sheet and move to cooling rack while you are making the frosting.

Ingredients:
1/2 cup butter softened
1-1/2 cups powdered sugar
1 tsp vanilla

Beat butter and powdered sugar in a medium bowl.  Add vanilla and beat on high speed until light and fluffy.


Spread frosting on cookies with a knife, then sandwich like sized cookies together.
