French Onion Soup Stuffed Mushrooms


I know this doesn't look like a Memorial Day weekend appetizer but here in NJ the first part of the weekend is going to be cold and rainy. This is a good comfort food appetizer to bring to a party.

I know I shouldn't complain about the weather in NJ after the terrible tornado that happened this week in Oklahoma.  After spending the last 7 months watching the first floor of our beach house being repaired after Hurricane Sandy, I can't imagine what these people are feeling having no houses left standing and having to sift through big piles of rubble to find their belongings. Our thoughts are with the people of Oklahoma. This recipe is from The Pioneer Woman.   

Ingredients:
2 tbsp butter
2 whole large onions, sliced
1/4 cup beef broth (vegetable broth if you would like it to be vegetarian)
7 dashes worcestershire sauce
splash of red wine
1/2 cup grated swiss cheese
24 whole White or Crimini mushrooms, washed with stems removed
minced parsley

Directions:
Preheat oven to 325 degrees.
In a medium skillet, melt 1 tbsp butter.  Add onions and saute for about 20 minutes, stirring occasionally, until they are soft.  Splash in the wine, broth and worcestershire sauce. Cook for another 5 minutes.  Set aside.

Melt the other tbsp butter in a large skillet over medium heat.  Add mushrooms and heat for 2 minutes
Sprinkle mushrooms with salt.


Place mushrooms face down in a baking dish.  Fill inside with onions then sprinkle with cheese over top.

Bake for 10 minutes at 325 degrees.  Turn on broiler and broil for a minute or two until the cheese starts to bubble.  Sprinkle minced parsley over top.
