Caprese Salad Skewers


We hope you all enjoyed Father's Day yesterday with the leading men in your lives. It was a special day for us since it was John's 1st Father's Day, also the first Father's Day as a grandpa for my dad and we even had both of Owen's Great-Grandpas to celebrate with as well. My mom has been hosting a BBQ on Father's Day for 35 years and yesterday I made these Caprese Salad Skewers as one of our appetizers. This is less of a recipe and more of an idea for a quick, easy and healthy appetizer or snack for the summer that everyone will love.

Ingredients:
1 Pint Grape Tomatoes
1 Fresh Basil Plant
1 Container Fresh Mozzarella  - Ciliegine (Cherry) Size
Balsamic Glaze
Toothpicks

To assemble the skewers thread the toothpick through one end of the basil leaf, next put on a tomato and then half of a mozzarella ball followed by the other end of the basil leaf. For bigger leaves I did two tomatoes or two pieces of cheese. Drizzle with Balsamic glaze and serve immediately.

  5. How is the Balsamic Glaze made? It all sounds very nice ~ Have you tried any other glaze/dressing/sauce with this ?

    1. Marilyn - I took the easy way out and bought pre-made glaze which can be found in the Italian section of your grocery store. You can also make it from scratch by cooking down Balsamic Vinegar until it's thick and the consistency of a syrup. Hope that helps!!
