Blueberry Pie Bars



We love our fresh blueberries here especially in the summertime.  I just can't seem to find enough ways to bake them into something.  My pinterest board is full of berry ideas.  This recipe is from Lifes simple measures.  Food Network Star is one of my favorite TV shows in the summer. The girls and I all watch it together. I have watched the last 6 seasons and I'm so happy that Damaris won this season of Food Network Star which ended on Sunday. She is so sweet and funny and I love her southern talk. We can't wait to watch her new show and try all her recipes.      

Ingredients:
Crust & Topping
1-1/2 cup all purpose flour
3/4 cup sugar
1/8 tsp salt
1/2 tsp almond extract
3/4 cup unsalted butter chilled

Filling
2 large eggs
1 cup sugar
1/2 cup sour cream
3/8 cup all purpose flour
3/4 tsp almond extract
20 oz fresh blueberries

Directions
Heat oven to 350 degrees.  Grease an 8 x 8 inch pan with PAM and set aside.

Combine the flour, sugar and salt in a food processor or I used my Kitchen Aid mixer since my food processor isn't big enough.  Cut the butter into 1/2" pieces and add to flour mixture.  Add almond extract. Mix until the butter is evenly distributed but the mixture is still crumbly.


Reserve 1-1/2 cups of the mixture for the topping. Set aside.  Press remaining mixture into bottom of prepared pan.

Whisk eggs in a large bowl, then add sugar, sour cream, flour and almond extract.  Gently fold in the blueberries.


Spoon the filling over the crust.



Sprinkle the reserved topping mixture evenly over the filling.


Bake for 45 to 55 minutes or until top turns golden brown.  Cool 1 hour before cutting and serving.
