Baked Zucchini Sticks

Most side dishes don't get the attention they deserve, often because cooks are more concerned about their main course when prepping and preparing dinner. I know this is true for me personally and apparently true for my fellow Flavors by Four cooks because it has taken us three and a half months to share anything that can remotely be considered a side dish. This was a tasty and easy alternative to the sauteed vegetables I serve way too regularly.

Ingredients:
3 Medium Zucchinis - Sliced into sticks
1 Egg
1/3 Cup Panko Breadcrumbs
1/3 Cup Regular Breadcrumbs
Pam Cooking Spray
2 Tbsp Grated Parmesan Cheese
1/4 Tsp Garlic Powder
S&P to taste
Start by Preheating the oven to 425 F. Next you can wash your zucchini and cut it into sticks, try to make them all the same size so they can cook evenly.
In a small bowl beat the egg with a fork, season with S&P. In a medium size bowl combine the parmsean cheese, panko and regular breadcrumbs and garlic powder. I like using Panko breadcrumbs because they give more of a crunch than the regular ones. Spray the baking sheet with the cooking spray and set it next to the two bowls.
In an assmebly line fashion, dip each zucchini stick into the egg wash, then roll it around in the breadcumbs. Shake off the excess and place them down on the baking sheet in rows. Bake for 20-25 minutes. Flipping the sticks at least once half way through the cooking time.
