A recipe like this makes me realize why I love fish so much. This is a great recipe that I came across on How Sweet It Is. Not really a fall recipe but a nice dish to have before it's freezing outside and while strawberries and blueberries are still readily available. The salsa made this dish and I would definitely make it another time just to eat with chip.
Indigents for Fish:
4 pieces of fresh or frozen Tilapia
2 tablespoons olive oil
3 tablespoons lime juice
2 garlic cloves
1/2 teaspoon salt
1/2 teaspoon pepper
1/3 cup flour
Some oil for Frying
Ingredients for Salsa:
1 cup blueberries
5 or so strawberries
1/4 of a red onion
juice of two limes
1/3 cup fresh cilantro (or in my case 2 cubes of frozen)
1/2 of avocado
salt and pepper
Sprinkle the Tilapia with salt and pepper and lay in a dish. In a bowl combine the olive oil, honey, lime juice, and garlic. Mix and then pour over fish. Let marinate for an hour or so. Heat the non stick skillet over medium heat and add olive oil. Lightly bread the fish in the flour .
Then add to hot skillet. Cook until crispy on each side. About 4 minutes each side. Remove Tilapia once cooked and lay on paper towel for a few while you make the salsa.
Combine the blueberries, strawberries, red onion, lime juice, and cilantro in a food processor. Pulse a few times until you get a chunky consistency. I didn't read this part before I started pulsing so I made more of a sauce then a salsa. Still tasted REALLY good just wish I left it more chunky. Season with salt and pepper. Transfer salsa into bowl and combine with the chopped avocado.
Serve over the fish with some tortilla chips on the side.
