Oatmeal Craisin White Chocolate Chip Cookies


This is one of my favorite go to cookies especially for this time of year. The recipe is from an Ocean Spray Craisin advertisement I found in one of my magazines about two years ago. This cookie surprises everyone because its not the traditional oatmeal raisin because of the craisins and it also has an unexpected sweetness from the white chocolate chips. 
Ingredients:
2/3 Cup Margarine - Softened
2/3 Cup Brown Sugar
2 Eggs
1 1/2 Cup Old Fashion Oats
1 1/2 Cup Flour
1 Tsp Baking Soda
1/2 Tsp Salt
6 oz package Craisins Dried Cranberries
2/3 Cup White Chocolate Chips

Start by preheating the oven to 375F. Mix together your dry ingredients in a medium sized bowl (flour, oats, salt, baking soda) and set aside. In your stand mixer bowl combine the brown sugar and softened butter on a medium speed until fluffy and light. Add the eggs and mix well again.
Slowly begin adding your dry ingredients into the bowl little by little. Mix well after each addition. When all the dry ingredients have been added. Gently stir in the cranberries and white chocolate chips with a spatula.
Mix until everything is well combined. Using an ice cream scooper drop about a teaspoon of the cookie dough on a ungreased cookie sheet at least an inch apart. Bake 10 minutes until golden brown. Cool on a wire rack. Makes approximately 2 dozen depending on size.
