Christmas cookie #2 - Cranberry Pistachio Cookies



These are the perfect Christmas cookie if you like the flavor of pistachio - green with red cranberries mixed in.  They were very easy to make because you start with a pouch of Betty Crocker sugar cookie mix.  These were on bettycrocker.com/recipes.  My husband loved them so if you like pistachio and want a cookie without any chocolate, give them a try.


Ingredients:
1 pouch Betty Crocker sugar cookie mix
1 box 4 serving size pistachio instant pudding mix
1/4 cup all purpose flour
1/2 cup unsalted butter melted
2 eggs
3/4 cup salted pistachio nuts, chopped
3/4 cup dried cranberries, chopped

Heat oven to 350.  In large bowl, stir together cookie mix, pudding mix and flour.  Stir in melted butter and eggs until soft dough forms.  Add pistachios and cranberries, mix well.


Using small cookie scoop or teaspoon, drop dough 2 inches apart on ungreased cookie sheet.  Press with fingers to slightly flatten.



Bake 9 to 11 minutes until edges are light golden brown.  Cool 2 minutes, then remove from cookie sheet to wire rack.  Cool completely.  Store tightly covered at room temperature.
