Christmas cookie #4 - Snowball meltaways



For the last 33 years these have been my husband's favorite Christmas cookie.  He eats these by the handful and gets powdered sugar all over him.  They have only a few ingredients and are easy to make.  They are the perfect sweet treat with a cup of tea. 

Ingredients:
2 sticks unsalted butter, melted and chilled
1/4 cup sifted powdered sugar
1 tsp vanilla
2-1/2 cups sifted flour
3/4 cup finely chopped pecans
powdered sugar for coating


In a heavy saucepan, over low heat, melt butter until light brown in color.  Pour into bowl and chill in refrigerator until firm.  Cream browned butter, sugar and vanilla until light and fluffy.  Gradually add in flour and mix in chopped pecans with a spoon.   Preheat oven to 325 degrees.



Chill for a few minutes in refrigerator and shape into 1" balls.  Mine are a little bigger than that as I used my cookie scooper.  Bake at 325 degrees for 15 minutes.


Roll in powdered sugar while still hot using a spoon so you don't burn your fingers.  Cool on wire rack.
