Parmesan Encrusted Tilapia


I love a recipe that only has a few ingredients and can be thrown together at the last minute. I found this in a Self or Shape magazine years ago and have been making it ever since. It's light and healthy, perfect for a night after work when the last thing you want to do is cook. We keep Tilapia in the freezer all the time because its a mild, versatile fish that is reasonably priced. I always want to do something new with it but 9 times out of 10 this is how we prepare it because its so tasty.

Ingredients:
4 Tilapia Fillets (About 1 pound)
1 Tbsp Italian Seasoning
1/2 Cup Parmesan Cheese - Grated
1 Tbsp Olive Oil
S&P

Combine the Parmesan cheese and Italian seasoning in a small bowl and set aside. Preheat the broiler of your oven. Pat the tilapia fillets dry with a paper towel, then season both sides of the fish with salt & pepper.
 In a large pan heat the olive oil over medium to high heat. Cook the fish for about 3 minutes or until they turn white with a slight brown crisp to them. Flip the fish over only once to keep the fillets from falling apart. Allow the fish to cook about 1 minute on the second side.
Take the pan off of the heat and sprinkle the Parmesan seasoned mixture over top of the fillets. Place the pan in the broiler for about 3-4 minutes until the cheese has warmed and browned.
Carefully using an oven mitt take the pan out of the broiler, it will be super hot! Using a large spatula serve the fish immediately. We've had this meal so many times I've paired it with a bunch of different things. It goes nicely with rice pilaf or a couscous and a side of vegetables or a salad.
