Pumpkin Scones w/Spice Glaze



I had leftover pumpkin from the pumpkin streusel cake so I thought I would try these.  The spice glaze is what makes it extra delicious.  They only took a few minutes to put together.  I am excited for this weekend as we are going to see Sam in Maryland.  She's been gone for a month already and it's time for a little mother/daughter time. The Inner Harbor is so much fun.  I'm sure we won't have a problem finding things to do. This is another recipe from www.food.com.

Ingredients:

Scones
2 cups all purpose flour
7 tbsp sugar
1 tbsp baking powder
1/2 tsp salt
1/2 tsp ground cinnamon
1/2 tsp ground nutmeg
1/4 tsp ground ginger
6 tbsp cold butter
3/4 cup canned pumpkin
3 tbsp half and half
1 large egg

Spiced Glaze
1 cup powdered sugar
3 tbsp powdered sugar
2 tbsp heavy cream
1/4 tsp ground cinnamon
1/8 tsp ground nutmeg

Directions:
Preheat oven to 425 degrees.  Line a baking sheet with parchment paper.
Combine flour, sugar, baking powder, salt and spices in a large bowl.


Cut butter into the dry ingredients until mixture is crumbly and no chunks of butter are obvious.  You can use a pastry knife, food processor or knife.


In a separate bowl whisk together pumpkin, half and half and an egg.


Fold wet ingredients into dry ingredients.  Form the dough into a ball.  Pat out dough onto a lightly floured surface and form into a 1" thick rectangle (about 9" long x 3" wide).  Using a large knife or pizza cutter, slice the dough twice through the width, making three equal portions.  Cut those three slices diagonally so that you have 6 triangular slices of dough.  Place on prepared baking sheet.

Bake for 14-16 minutes or until scones begin to turn light brown.  Place on wire rack to cool.


To make the spiced icing, combine the ingredients together.  Drizzle the icing over each scone and allow the icing to dry before serving (at least an hour).  A squirt bottle or a plastic bag with the bottom cut off will work well for drizzling.
