Chocolate Pecan Pie Bars & Our Second Blog Anniversary
It's hard to believe we decided to start this two years ago today but they always say time flies when you are having fun. And I know we have all had a lot of fun sharing all the dishes we have made. My husband and I have eaten way more desserts than we should have since we started this. Luckily for us he doesn't ever have to worry about his weight and I love going to the gym. The girls and I have gotten to be much better cooks because of Flavors by Four and we aren't afraid to try anything now. We are so grateful for all of our readers and look forward to another great year of trying new foods and new flavors.
We had these as one of our 4 desserts on Thanksgiving. You always need at least one chocolate dessert for the non-pumpkin lovers in the family. These are from www.food.com.
Ingredients:
1/2 cup unsalted butter, at room temperature
2 tbsp unsalted butter, melted
1/4 cup light brown sugar, packed
1-1/4 cups all purpose flour
1/2 tsp salt
3 large eggs
3/4 cup light corn syrup
1/2 cup sugar
2 cups semi-sweet chocolate chips
2 cups pecans, coarsely chopped
Preheat oven to 350 degrees. Line bottom and side of a 9 x 13 pan with aluminum foil.
In the bowl of an electric mixer, beat butter, brown sugar, flour, and salt until coarse crumbs form. Pour mixture into prepared pan. Press firmly into the bottom.
Bake until lightly browned about 25 - 30 minutes. Let cool for 10 minutes.
While that is cooling, in a large bowl, mix eggs, corn syrup, sugar and 2 tbsp melted butter until well combined.
Add chocolate chips and pecans.
Pour over cooled crust. Bake until set about 25 minutes. Cool completely in pan before lifting out of pan with foil. Cut bars and serve.
