Cowboy Cookies



It's Secret Recipe Time again.  This month we have been assigned to The Bad Girl's Kitchen.  This blog is headed by Min who lives somewhere in the Southwest.  She has many other contributors who post recipes occasionally but the majority of recipes are from Min herself.  She had an excellent selection of options for me to choose from since her blog has been around since 2008.  I narrowed it down to Bruschetta chicken bakeCoconut Granola, or Cowboy Cookies.  I chose the Cowboy Cookies since I wanted to make something I could send to Sam at school and Sam and her roommates love cookies.  But I think I will be visiting her blog again to make my other two choices soon.  

Ingredients:
2 cups all purpose flour
1 tsp baking soda
1 tsp salt
1/2 tsp baking powder
2 sticks unsalted butter softened
3/4 sugar
3/4 cup light brown sugar
2 large eggs
1 tsp vanilla extract
1-1/2 cups old fashioned oats
1 cup chocolate chips
3 ounces chopped pecans
1/2 cup shredded sweetened coconut

Directions:

Preheat oven to 350 degrees.  Line cooking sheets with parchment paper and then spray parchment with PAM.  Sift flour, baking soda, salt and baking powder into medium bowl.

Beat butter and sugars with a mixer on medium high until pale and creamy.  Reduce speed to medium and add eggs 1 at a time, beating well after each egg.  Beat in vanilla.  Reduce speed to low and slowly add the flour mixture, beating until just combined.


Stir in oats, chocolate chips, pecans and coconut until combined.  (Dough can now be refrigerated for up to 3 days before baking).




Using a 1-1/2" ice cream scoop and a tablespoon, drop dough onto prepared baking sheets spacing 3 inches apart.


Bake until edges of cookies begin to brown about 11 to 13 minutes.  Transfer baking sheets to wire rack and let cool for 5 minutes.  Transfer cookies to racks and let cool.

  8. One of our family and ranch favorites! Great choice, glad you liked them! I sometimes store my dough in the fridge and bake fresh cookies daily...OR freeze cookie balls for baking later (if I can get them baked before my cowboys discover them and eat them frozen!) ;-)

  12. Thanks so much for sharing at Weekend Potluck! Cowboy Cookies are the favorite cookie from my mom's recipe file. She didn't add coconut, but I love that idea. I'm just really fond of oatmeal in my choc chip cookies. Yours look fantastic.
