Brownie Almond Joy Bites



The weekend did not go as planned.  I had looked forward all week long to spending the weekend down the shore since according to the weather people it was going to be very nice, especially Sunday.  Obviously their definition of nice is very different than mine.  It was gray, cloudy, and mid-50's cold all weekend long.  The long bike rides we always take were cut very short as a sweatshirt didn't keep me warm enough to make the ride enjoyable at all. So instead of getting much needed exercise I made these.  I have always been an Almond Joy lover so they have been on my list for a while.  

Ingredients:
Brownie batter (homemade or from a box - I used Duncan Hines)  plus ingredients
 needed to make the brownies.
4 cups shredded sweetened coconut
1 can sweetened condensed milk
3 dozen almonds
1 bag 12 oz. semi sweet chocolate chips
1 tsp vegetable oil

Preheat oven according to brownie recipe directions and spray pan with nonstick spray.  Bake according to directions on box.  When brownies are done place pan on cooling rack.  Using a small biscuit cutter or similar item with round shape, cut brownies and put on plate.  Eat remaining brownie pieces in place of dinner.  
In a medium bowl, combine coconut and sweetened condensed milk.   With clean hands or a spoon or both form coconut mixture into a ball and press on top of the brownie bites.  Press an almond into the top of each one.  Place brownies in the freezer to harden for 30 minutes.


Melt chocolate chips and vegetable oil in microwave very slowly at low power until chips are melted when stirred.  It should take about 1-2 minutes but stop and check before going the full 2 minutes.  Remove from freezer and make sure almonds are pressed into the coconut before dipping the tops with chocolate.
This gets a bit messy but its worth it.  Place dipped brownies on a plate and refrigerate until chocolate is set.


They don't all turn out pretty but if you like coconut, almonds and chocolate these are well worth the messy fingers.  When the chocolate in the dipping container got down too low to dip I drizzled the chocolate over top the brownie bites so I didn't waste any of the melted chocolate.
