Cinnamon Bun Scones



With Mother's Day this coming Sunday I wanted to be able to share a recipe with you that would be perfect for a Brunch or the classic Breakfast in Bed celebration. These scones are delicious and easy enough for the man in your life to make for you with or without the kids. I recently have had a bunch of close girlfriends have babies or announce they are pregnant. Watching them so happy with their new bundles of joy is amazing. All of these women will be celebrating their 1st mothers day this year or are currently a Mother-to be which are both very exciting times. I challenge all of their husbands to make those well deserving women these scones!! 
Makes 12 Scones

Ingredients for Scones:
2 Cups Flour
1 Cup Old Fashion Uncooked Oatmeal
1 Tbsp Baking Powder
1/4 Tsp Salt
8 Tbsp (1 Stick) Salted Butter - Chilled / Cut in Pieces
2 Tbsp Cinnamon
1/4 Cup and 2 Tbsp Sugar
1 Tsp Vanilla Extract
1 Large Egg - beaten
3/4 Cup Skim Milk

Ingredients for Glaze:
1 Cup Powdered Sugar
1/4 Tsp Vanilla Extract
3-4 Tsp Skim Milk

Start by preheating the oven to 425. In a large bowl combine all of the dry ingredients together (flour, oatmeal, salt, 1/4 cup sugar and baking powder). Then using a pastry cutter or two knives cut in the chilled, sliced cold butter into the dry ingredients until it resembles coarse crumbles.

In a medium sized bowl combine all of the wet ingredients (beaten egg, vanilla, and milk). Pour the wet ingredients into the bowl of dry ingredients. It will be just enough liquid to make a very thick batter. Mix with a spatula until just combined.

In a custard cup or other small bowl combine the remaining 2 Tbsp of sugar and the cinnamon. Pour the cinnamon and sugar over the batter and swirl in it. Don't over mix and blend it in completely, just make sure its evenly distributed. 
On a cookie sheet with parchment paper or one you've sprayed with Pam. Using an ice cream scooper, drop the dough about 2 inches a part. Putting no more than 6 scones an a sheet. Bake 11-13 minutes. The scones should be golden brown and the tops should be firm. Take them out of the oven and let them cool for a few minutes on the baking sheet and then transfer them over to a rack to cool off completely for about 15 minutes.
While they are cooling you can make the glaze. In another bowl combine the powdered sugar, vanilla and milk. Stir until you get the correct consistency. If its too runny add more powdered sugar, if you feel its too thick add a little more milk. Slide a piece of parchment paper under the cooling rack for easy clean up and then drizzle generous spoonfuls of the glaze over each scone.
