Banana Bread Scones with Brown Butter Glaze

This week we were left with a few bananas on the counter top that were overripe before we were able to eat them. That normally doesn't happen because I only buy a few at a time since there are just two of us, unlike my mom who feels guilty separating them at the store and always goes home with a whole bag even though she knows she won't use them all. My go to idea is always to make banana bread but I decided to look for a new recipe and found these scones on Pinterest  They were a nice twist on banana bread since the consistency was the same but it's the brown butter glaze that really makes them outstanding, I could drink that stuff straight from the bowl.

Makes 8 Scones

Ingredients for Scone:
2 Large or 3 Small Over Ripe Bananas
1/2 Cup Light Sour Cream or Greek Yogurt
2 1/2 Cup Flour
1/4 Cup Sugar
2 Tsp Baking Powder
1/2 Salt
1 Tsp Cinnamon
4 Tbsp I Can't Believe it's Not Butter
1/2 Cup Chopped Pecans (Optional)
1 Tbsp Skim Milk

Ingredients for Glaze:
1 Tbsp I Can't Believe it's Not Butter
1/4 Cup Brown Sugar
1/4 Tsp Vanilla Extract
1/2 Cup Powdered Sugar
1-2 Tbsp Skim Milk




In a large bowl whisk together the flour, salt, sugar, and baking powder. Add the cinnamon and mix again. Cube the butter and keep it as cold as possible. When you are ready, use a pastry cutter or your hands to cut the butter into the bowl. The dry ingredients will begin to get crumbly as the butter mixes in. 
In a separate small bowl mash up the bananas, add them to the dry ingredients. The moisture from the bananas will begin to form the dough as you mix them together.
You most likely won't have enough moisture to complete the dough with just the bananas, so add in the sour cream or greek yogurt and stir again. The dough should be sticky but not too moist, if feel you still need a little more moisture to incorporate all of the dry ingredients add a Tbsp of milk.
Once the dough is formed you can either stir in the nuts or just wait and put them on top like I did. Take the dough and place it on top of some parchment paper, forming it to be a large thick round disc. 
Put another piece of parchment paper on top and allow it to cool in the freezer for 30 minutes - an hour this will help you cut the dough into scones. When the dough is almost ready preheat the oven to 400 F.  Cut the disc of dough into 8 fairly even triangles. 
Place the scones on a piece of parchment paper a few inches a part since they will spread out. Bake for about 25 minutes. 
Allow the scones to cool for a few minutes on the baking sheet and then cool fully on a baking rack. When the scones are almost completely cooled you can make the glaze. Melt the butter and brown sugar on low in the microwave for 5 minutes until both are melted, stir them together. Once the sugar dissolves add in the vanilla, milk and powdered sugar until you reach the desired consistency of glaze, too runny and you can add extra powdered sugar, too thick you can add a little more milk...
Drizzle the glaze over top of the entire scone. Allow the glaze to set completely for storing or serving.

Pumpkin Scones w/Spice Glaze



I had leftover pumpkin from the pumpkin streusel cake so I thought I would try these.  The spice glaze is what makes it extra delicious.  They only took a few minutes to put together.  I am excited for this weekend as we are going to see Sam in Maryland.  She's been gone for a month already and it's time for a little mother/daughter time. The Inner Harbor is so much fun.  I'm sure we won't have a problem finding things to do. This is another recipe from www.food.com.

Ingredients:

Scones
2 cups all purpose flour
7 tbsp sugar
1 tbsp baking powder
1/2 tsp salt
1/2 tsp ground cinnamon
1/2 tsp ground nutmeg
1/4 tsp ground ginger
6 tbsp cold butter
3/4 cup canned pumpkin
3 tbsp half and half
1 large egg

Spiced Glaze
1 cup powdered sugar
3 tbsp powdered sugar
2 tbsp heavy cream
1/4 tsp ground cinnamon
1/8 tsp ground nutmeg

Directions:
Preheat oven to 425 degrees.  Line a baking sheet with parchment paper.
Combine flour, sugar, baking powder, salt and spices in a large bowl.


Cut butter into the dry ingredients until mixture is crumbly and no chunks of butter are obvious.  You can use a pastry knife, food processor or knife.


In a separate bowl whisk together pumpkin, half and half and an egg.


Fold wet ingredients into dry ingredients.  Form the dough into a ball.  Pat out dough onto a lightly floured surface and form into a 1" thick rectangle (about 9" long x 3" wide).  Using a large knife or pizza cutter, slice the dough twice through the width, making three equal portions.  Cut those three slices diagonally so that you have 6 triangular slices of dough.  Place on prepared baking sheet.

Bake for 14-16 minutes or until scones begin to turn light brown.  Place on wire rack to cool.


To make the spiced icing, combine the ingredients together.  Drizzle the icing over each scone and allow the icing to dry before serving (at least an hour).  A squirt bottle or a plastic bag with the bottom cut off will work well for drizzling.

Blackberry Scones



I thought it would be a good idea to do something different last weekend so we went and picked our own blackberries.  We have picked apples for a few years but this was a first for blackberries.  I found a place close to our house at the shore and the fruit is pesticide free which is always a plus.  The Berry Farm At Colts Neck is right behind the well known and always crowded Delicious Orchards store.  After picking our blackberries we went there to get some cider donuts, a blueberry pie, some zucchini, and a few green tomatoes.  They also have a farm a few minutes from this one that you can pick your own peaches and nectarines which I hope to do some time soon.  This recipe is from  www.inspiredtaste.net

Ingredients:
2 cups all purpose flour
1/3 cup sugar
1 tsp baking powder
1/4 tsp baking soda
1/2 tsp salt
1/2 cup unsalted butter, frozen
1/2 cup sour cream, cold
1 egg
1 tbsp grated lemon zest
8 oz blackberries
course sugar for sprinkling

Heat oven to 400 degrees.  Line cookie sheet with parchment paper.
In a large bowl mix together flour, sugar, baking powder, baking soda, and salt.
Using a grater, grate frozen butter into flour mixture or cut the butter into small cubes and then work in with your fingers until the mixture looks like coarse meal.


In a small bowl whisk sour cream, egg and lemon zest with a fork and then add to flour and butter mixture. Use a fork to stir everything together until just moistened.  


Add blackberries and gently stir into the dough.  Its almost impossible to mix and not squish a blackberry or two but that will give the dough a little color.  

Empty the loose dough onto a clean floured work surface and then shape the dough into a circle.  Cut the dough into 8 wedges.


Carefully transfer to a baking sheet.  Sprinkle the top of each scone with the coarse sugar and bake for 13-15 minutes or until they are light golden brown. 


Cool for 10 to 15 minutes.  Serve warm or cold.

Cinnamon Bun Scones



With Mother's Day this coming Sunday I wanted to be able to share a recipe with you that would be perfect for a Brunch or the classic Breakfast in Bed celebration. These scones are delicious and easy enough for the man in your life to make for you with or without the kids. I recently have had a bunch of close girlfriends have babies or announce they are pregnant. Watching them so happy with their new bundles of joy is amazing. All of these women will be celebrating their 1st mothers day this year or are currently a Mother-to be which are both very exciting times. I challenge all of their husbands to make those well deserving women these scones!! 
Makes 12 Scones

Ingredients for Scones:
2 Cups Flour
1 Cup Old Fashion Uncooked Oatmeal
1 Tbsp Baking Powder
1/4 Tsp Salt
8 Tbsp (1 Stick) Salted Butter - Chilled / Cut in Pieces
2 Tbsp Cinnamon
1/4 Cup and 2 Tbsp Sugar
1 Tsp Vanilla Extract
1 Large Egg - beaten
3/4 Cup Skim Milk

Ingredients for Glaze:
1 Cup Powdered Sugar
1/4 Tsp Vanilla Extract
3-4 Tsp Skim Milk

Start by preheating the oven to 425. In a large bowl combine all of the dry ingredients together (flour, oatmeal, salt, 1/4 cup sugar and baking powder). Then using a pastry cutter or two knives cut in the chilled, sliced cold butter into the dry ingredients until it resembles coarse crumbles.

In a medium sized bowl combine all of the wet ingredients (beaten egg, vanilla, and milk). Pour the wet ingredients into the bowl of dry ingredients. It will be just enough liquid to make a very thick batter. Mix with a spatula until just combined.

In a custard cup or other small bowl combine the remaining 2 Tbsp of sugar and the cinnamon. Pour the cinnamon and sugar over the batter and swirl in it. Don't over mix and blend it in completely, just make sure its evenly distributed. 
On a cookie sheet with parchment paper or one you've sprayed with Pam. Using an ice cream scooper, drop the dough about 2 inches a part. Putting no more than 6 scones an a sheet. Bake 11-13 minutes. The scones should be golden brown and the tops should be firm. Take them out of the oven and let them cool for a few minutes on the baking sheet and then transfer them over to a rack to cool off completely for about 15 minutes.
While they are cooling you can make the glaze. In another bowl combine the powdered sugar, vanilla and milk. Stir until you get the correct consistency. If its too runny add more powdered sugar, if you feel its too thick add a little more milk. Slide a piece of parchment paper under the cooling rack for easy clean up and then drizzle generous spoonfuls of the glaze over each scone.
