I love baking in the Fall and turning the oven on so you don't have to turn the heat on in the house yet. I made this for relatives that stayed with us at the beach last weekend. Everyone enjoyed it.
Sam is coming home from school this weekend and we will be doing more baking, taking a trip to the Mall and going apple/pumpkin picking. All fun things! This recipe was adapted from the Entenmann's Big Book of Baking but I saw it on pinterest.
Ingredients:
Batter
1-3/4 cups flour
1-1/2 tsp pumpkin spice
1 tsp baking soda
1 tsp baking powder
3/4 tsp salt
1 stick unsalted butter
1-1/4 cups sugar
3 large eggs
12 oz canned pureed pumpkin
1 tsp vanilla extract
1/3 cup milk
Topping:
3/4 cup quick oats
3/4 cup flour
3/4 cup light brown sugar
1/2 tsp cinnamon
8 tbsp unsalted butter
Directions:
Preheat oven to 350 degrees.
Grease a 8 x 8 or 9 x 9 baking pan and line with parchment paper.
Make topping first by combining the oats, flour, sugar and cinnamon. Cut in butter until crumbly. You can do this in a food processor or I did it in a bowl by pressing the butter into the fork and combining the butter with the rest of the mixture. Set bowl aside.
Sift the flour, pumpkin spice, baking soda, baking powder and salt into a bowl.
In a separate bowl beat the butter with an electric mixer until smooth. Add the sugar and 1 egg at a time blending after each addition. Add the pumpkin and vanilla extract to the wet batter mixture.
Gradually beat the dry ingredients into the batter. Slowly add the milk.
Transfer the batter to the prepared pan.
Spread with the topping. Bake the cake until a toothpick in the center comes out clean about 50-55 minutes.
Cool in the pan for 15 minutes. Turn the cake out on a rack and cool completely.
