I spent a long weekend in Florida at the end of February at my grandma's house with my parents. We of course ate most meals out and I had this dish one night at the Shrimp and Dolphin Bar in Jensen Beach and it was really good. I've had numerous meals out and always thought "Oh I should try to remake this at home" but I never do. So I decided to try this time. It was quite a quick meal and only had four ingredients. Obviously the restaurant didn't use store brought hollandaise mix or frozen dip but it worked for me.
1 Cup of Whole Wheat Orzo
1 Package Hollandaise Sauce
1 Package TGIF's Spinach and Artichoke Dip
About 10 Frozen Shrimp
I cooked all four things as directed on their packaging. Started boiling the water for the Orzo first. Then once that was boiling I added the Orzo and I started the melting the butter for Hollandaise sauce. Then mixed the hollandaise powder into the butter. Once both were going I started sauteing the shrimp in olive oil and a sprinkle or two of garlic powder. Then I microwaved the dip. It was a LOT to do at one time but was all done in about 15 minutes.
Once all four things were done. I plated some Orzo topped it with some Spinach and Artichoke dip and Shrimp and then drizzled the hollandaise over it all. It was enough for 2 people and would just add more Shrimp (I brought a bag of small shrimp), maybe a little more orzo and it could serve 4. It turned out pretty good but just wasn't as good as when I ate it the first time sitting on the water in Florida.
Enjoy Kathy
