I can't eat a plain turkey burger. There is something about it. I don't like the color or the taste. When I saw this recipe from Rachael Ray I knew this would be the way I would try my turkey burger. The added tomato paste changes the color and the chopped vegetables and grated cheese make the burger taste anything but plain.
Ingredients:
1-1/3 lb. ground turkey breast
salt and pepper
1/2 cup crimini mushrooms chopped
1/2 red bell pepper, seeded and chopped
1/2 yellow onion, finely chopped
1 tbsp chopped garlic
1 small can tomato paste
1 tbsp worcestershire sauce
1 tsp crushed red pepper flakes
1/2 cup grated Parmigiano-Reggiano or Romano cheese
handful of parsley chopped
4 hard rolls
Preheat oven to 425 degrees.
Combine meat with salt and pepper, chopped mushrooms, chopped bell pepper, chopped onion, garlic, tomato paste, worcestershire, crushed red pepper flakes, cheese and parsley. Form meat into 4 large burgers 1" thick.
Place on parchment paper lined cookie sheet and bake for 30-35 minutes. Place hard roll in oven for a minute or two if you want a toasted roll for your turkey burger.
