My youngest daughter's friend has been bringing buckeyes to us on Christmas morning for years now. We always look forward to the doorbell ringing because we know she will be bringing us a plate full of the delicious peanut butter/chocolate candy. Sam has to usually hide the plate from us so her family won't eat them all. When I saw these at food.com I knew everyone would love them. Luckily all the girls and both my son-in-laws came over for dinner on Sunday before Sam went back to school and I think the brownies were a hit. They can be made very easily and only have a few ingredients so I know these will be made again.
1 box of brownie mix, made according to back of box
1 cup creamy peanut butter
1/2 cup softened butter
4 cups powdered sugar
2 tbsp milk, as needed
1/2 cup heavy cream
6 ounces semisweet chocolate chips
Prepare the brownies according to the directions on the box or according to your own recipe.
Allow cooked brownies to cool completely.
In the bowl of a stand mixer, beat together the peanut butter, butter and powdered sugar until well combined and smooth. The mixture should be thick, but you can add a tablespoon or two of milk if needed so that you can spread the mixture on top of the brownies.
You can't see the brownies but they are under the layer of peanut butter mixture.
Heat the cream in the microwave for about 30 seconds or until it just begins to boil. Remove from heat and pour over the chocolate chips. Whisk until the chocolate is melted and it all comes together and becomes very shiny.
Allow to cool for 10 minutes and then pour over the peanut butter and brownie layers. Smooth the chocolate layer and then place the brownies in the refrigerator for at least an hour. Cut into small pieces.
