Chocolate Heart Whoopie Pies with Raspberry Marshmallow Filling



This is the last Valentine's Day recipe we will be posting but I wanted to make one more dessert with my new heart shaped silicon pans.  I made these to send to Samantha and her roommates at school. They all like when I send them sweet chocolate things.  The cakes are very soft and when I tilted them out of the pan onto a cooling rack they got indentions in them right away even though within seconds I turned them over onto the other side.  They might not look perfect but they still taste good.  This recipe is adapted from www.foodnetworkmagazine.com.


Ingredients:
Pies
1 stick unsalted butter, at room temperature
1 cup granulated sugar
2 eggs
1 cup buttermilk, at room temperature
1 tsp vanilla
1/4 tsp raspberry extract
2 cups flour
3/4 cup Hershey's unsweetened chocolate, I used special dark
1-1/2 tsp baking soda
1/2 tsp baking powder

Filling
1 stick unsalted butter, at room temperature
2/3 cup confectioners sugar
1 7 oz container marshmallow fluff
1/4 cup raspberry preserves, seedless
1/2 tsp raspberry extract

Directions:
Preheat oven to 400 degrees.

In the bowl of a mixer blend butter and sugar.  Add eggs and mix and then add buttermilk, vanilla and raspberry extract.  Set aside.  In separate bowl add flour, unsweetened chocolate, baking soda and baking powder.  Gradually add dry ingredients to wet ingredients and mix until just combined.


Spray heart shaped pan with cooking spray.  Drop 1-1/2 tbsp of batter and then take a spoon and spread batter into all sections of the heart.  Cook in oven for 8 minutes or until a toothpick comes out clean when inserted in the middle.  Tilt pan onto cooling rack and immediately turn each heart over to eliminate deep rack marks in top of each cake.  Spray pan with cooking spray before each batch.  You will need to do 3-4 batches to use all the batter.


While these are cooking make the filling by adding the butter, confectioners sugar, raspberry preserves, marshmallow fluff, and raspberry extract to a mixing bowl and mix until well blended together.


Assemble the whoopie pies by taking a heart and spreading  a spoonful of filling on top and then put another heart on top of that one.
