Baked Donuts with Almond Glaze


I was trying to find recipes for using up my buttermilk because it doesn't keep for very long and remembered that donuts were an option.  I have already tried apple cider doughnuts  and Chocolate Donuts with Chocolate Ganache. They were both delicious.  So I figured it was time to try plain vanilla with a little green glaze for the upcoming holiday. This was very easy as you can do it all in one bowl that can be hand mixed.  It only took a few minutes and the 12 doughnuts that were made disappeared in no time.  I found this recipe on the packaging that came with the Wilton Doughnut Pan.

Ingredients:
2 cups cake flour, sifted
3/4 cup sugar
2 tsp baking powder
1/4 tsp cinnamon
1 tsp salt
1 cup buttermilk
1/4 tsp almond extract
2 eggs lightly beaten
2 tbsp butter

Glaze
1 cup confectioners sugar
1/4 tsp almond extract
1 - 2 tbsp heavy cream
drop or two of green food coloring to tint if desired

Preheat oven to 425 degrees.  Spray doughnut pan with nonstick cooking spray.  In large mixing bowl, stir together cake flour, sugar, baking powder, cinnamon and salt.  Add buttermilk, eggs and butter.  Beat until just combined.


Fill each doughnut cup approximately 2/3 full.


Bake 7-9 minutes or until the top of the doughnuts spring back when touched.  Let cool in pan for 4 minutes before removing onto cooling rack.

Make glaze for donuts.  In small bowl combine confectioners sugar, almond extract, 1 tbsp heavy cream and combine.  Add more cream if needed until you have desired consistency.  Add drop or two of green food coloring if desired.   Dip top of doughnut into glaze and dry on cooling rack.
