Apple Broccoli Salad
Sorry about the lack of posts lately. I just had a few days of "fun" at jury duty and then a little computer glitz and Nicole has been working endlessly at work and in her free time finishing up her school work before graduation day. It's going to be 91 and sunny today in NJ. A little extreme but whatever. It's only going to be for today and tomorrow. I guess its time to turn the heat off. I've made this salad four times in a month I like it so much. It's a healthier version of broccoli salad with chopped apples, craisins and walnuts and the dressing base being made from yogurt. My husband liked it and he doesn't really like broccoli or yogurt. I like it for lunch or as a side dish.
6 cups broccoli florets, chopped
2 green onions, thinly sliced
2 chopped unpeeled cored apples
8 oz plain greek or regular yogurt
4 tbsp light mayonnaise
4 tsp red wine vinegar
5 tsp sugar
1 cup craisins
1/2 cup chopped walnuts or pecans
In a medium sized bowl combine the broccoli, onions and apples.
In a small bowl, whisk together the yogurt, mayonnaise, red wine vinegar, and sugar.
Pour over broccoli mixture. Stir to coat. Stir in craisins and walnuts. Refrigerate at least 30 minutes before serving.
