Easter Egg Hunt Cookies

I found this recipe months ago and knew immediately I would love it. It includes my two all time favorite candies, Cadbury Creme Eggs and Cadbury Mini Eggs. The fact that I found a recipe that uses both of them is amazing I want to hug the woman who came up with this! I patiently waited for the candy to come out into the stores and then finally this week I make the cookies. These are the perfect treat for any family celebrating Easter, I know they are going to become a yearly thing in my house!!

Makes 24 Cookies

Ingredients:
1 Cup I Can't Believe it's not Butter for Cooking and Baking
2 Packages of 12 Mini Cadbury Cream or Carmel Eggs
1 Bag Cadbury Mini Eggs
1 Container Whipped Vanilla Cake Frosting
2 1/2 Cups of Flour
3/4 Cup Sugar
3/4 Cup Brown Sugar
2 Eggs
1 Tsp Vanilla Extract
1 Tsp Baking Soda
1 Tsp Salt
Pam Spray
Green Food Coloring


Start by preheating your oven to 350 F. Spray a mini muffin tin with Pam and set aside. Once your butter or margarine has softened combine it with both of the sugars in your mixer bowl on a medium speed until creamy and smooth. Next add the vanilla and eggs one at a time. Combine your dry ingredients (flour, salt and baking soda) in a bowl. Slowly add the dry ingredients to the mixing bowl a little bit at a time until the dough forms.
Unwrap all of the amazing mini cadbury eggs. Take a spoonful of the dough and place an egg in the middle. Shape the dough around the egg so it is completely sealed inside. Place the formed dough ball into the mini muffin tin cup.
Bake for 10-12 minutes. The cookies should have a slightly golden brown edge when they are finished. Let them cool in the tin for about 10 minutes.
Then carefully twist them back and forth and pull them up out of the tin. Finish cooling them on a baking sheet for another 20 minutes or so. You don't want them to completely cool in the tin or it will make it harder to get them out.
When they are done cooling take about half of a container of vanilla frosting and add drops of green food coloring to it. Mix the frosting till you get the desired color of green. Frost the tops of the cookies and decorate them with your favorite hard shelled egg candy.
