Thai Chicken Pizza


Words can't explain to you how much I love this pizza. The first time we made it I insisted on having it for both lunch and dinner. I then asked John if we could make it again the next week. If you like Asian flavors and put Thai Chili Sauce on Stir Fry like we do, than this pizza will become one of your favorites as well. You wouldn't think this combination of flavors and ingredients would work as a pizza but I promise it will completely surprise you. Just a word for the wise if you load it up with veggies and chicken it may be better to eat with your fork and knife but its sweet, spicy and delicious either way.

Ingredients:
1 Package of Pizza Dough
1/4 Cup Flour
1 1/2 -2 Cups Shredded Part Skim Mozzarella Cheese
1 Yellow or Green Zucchini - Sliced
1/2 Cup Sweet Thai Chili Sauce (we use Shoprite brand)
1-1 1/2 Cooked Chicken Breast - Shredded
2 Scallions - Diced
1/2 Red Pepper - Finely Diced
1/2 Carrot or a few small ones - Shaved
1 Tsp Red Pepper Flakes
2-3 Tbsp Peanuts - Chopped
A Couple Basil Leaves

Start by preheating your oven to 400 F or whatever temperature your pizza dough suggests. On a flat, clean surface spread out the flour and place your pizza dough on top. Put a little flour on the rolling pin and roll the dough out to 1/4 of an inch which will be a 12 inch diameter pizza. Place your dough onto a baking sheet that has been sprayed with Pam.
Allow your dough to sit for a few minutes and stretch it out if you feel like its shrinking in from the sides of the pan. Now you can prep all your veggies: slice your zucchini, dice your scallions, red pepper and shave your carrots. Pour your sweet Thai chili sauce in the middle of the pizza and spread it around leaving a little room along the edge for your crust.
Arrange your zucchini on the bottom, followed by your red pepper and scallion. Shred your chicken and place it on top of your veggies. Place the shaved carrots on top, sprinkle everything with the red pepper flakes and top with the shredded cheese.
Bake for 15-20 minutes depending on the temperature suggestion of your pizza dough packaging. You obviously want the cheese to be melted and the crust beginning to be a golden brown color. Allow the pizza to sit for 5 minutes after coming out of the oven. Top it with the basil leaves and chopped peanuts.
Slice and serve.
