Almond Joy Bars
I can't believe Labor Day Weekend is here already. Where did the summer go? When Sam came home from school in May it seemed like she would be home for such a long time. The 3-1/2 months flew by and on Sunday she goes back to Maryland to start her junior year of college and we go back to no children being home. It's always a bit of an adjustment in the beginning but we will get through it.
I had a coconut/sweetened condensed milk craving yesterday. This is adapted from a recipe by Justapinch.com. It makes about 36 bars so if you don't want to eat that many cut the recipe in half which I should have done but didn't. Some of these will hopefully be making the trip to Maryland with Sam.
Ingredients:
10 tbsp unsalted butter, softened
1 cup brown sugar
2-1/2 cups flour
1/2 tsp salt
2 (14 oz) cans sweetened condensed milk
2 (14 oz) bags shredded coconut
3 bag (12 oz) semi-sweet chocolate chips
1 bag (6 oz ) whole almonds
Preheat oven to 350 degrees. Spray a 12 x 18 cookie sheet with PAM.
Mix softened butter and brown sugar until combined in a small bowl. Add flour and salt.
Press crumbs into prepared cookie sheet.
Spread coconut over crust. Sprinkle whole almonds over coconut layer.
Pour sweetened condensed milk evenly over almonds and coconut. Bake for 22-25 minutes until coconut and milk are lightly browned. Remove from oven and set pan on cooling rack.
Put chocolate chips into a large microwave safe bowl and melt, stirring until chips are completely melted and chocolate mixture is smooth.
Spread the melted chocolate on top of bars while bars are still warm.
Refrigerate until chocolate hardens. Cut into squares.
