I just can't believe it's August 1st. Where is the summer going? I saw this recipe at www.recipeboy.com and on pinterest and knew I would like it. If you are a banana bread fan you will love this, but only if you like raspberries and chocolate which happens to be the best flavor combination ever.
Ingredients:
2 cups all purpose flour
3/4 tsp baking soda
1/4 tsp salt
1 cup sugar
2 large eggs
1/2 stick unsalted butter, softened
1/2 stick unsalted butter, softened
1-1/2 cups mashed ripe bananas (about 3)
1/3 cup of low fat vanilla yogurt
1 tsp vanilla extract
1 cup semi sweet chocolate chips
1 cup raspberries, tossed in 1 tbsp flour
Directions:
Preheat oven to 350 degrees. Spray a 9 x 5 inch loaf pan with cooking spray.
In a medium bowl whisk together the flour, baking soda and salt.
In a separate bowl beat the sugar and butter with an electric mixer at medium speed until well blended (about 1 minute). Add the eggs one at a time, beating well after each egg has been added. Add the banana, yogurt and vanilla. Beat until blended.
Stir in the flour mixture, just until moist. Don't over mix. Stir in chocolate chips and gently stir in raspberries. Spoon the batter into a prepared pan.
Bake for 50 to 60 minutes or until a wooden toothpick inserted in the center comes out clean. Cool 15 minutes in the pan. Remove from pan and cool completely before slicing.
