Frosted Chocolate Chip Banana Bars


It's the first day of school in my town.  I live one house away from an elementary school so there was a lot of excitement going on this morning with children being dropped off for their first day of school.  When my four girls were going to school I would hang up my school bus flag in the front of the house and take their pictures in front of the flag wearing their new first day of school outfits.  They didn't really like having to do this because "none of their friends had to do it" and they just wanted to hurry up and get to school to see their friends, but I never gave them a choice and I'm so glad I didn't.  I have pictures of all of them from the day they started kindergarten until they were finished with high school. Now that they are all grown up I missed putting the flag up and taking their pictures today.

I always feel guilty if I have to throw away mushy overripe bananas.  So these bars, which shouldn't be in my house because I will eat them, are here.  I don't know why I have a such a problem throwing away bananas. I certainly have no problem throwing away bag salads or mealy apples or shriveled cucumbers or carrots. I guess because you can't make delicious desserts with any of those foods.  This recipe is adapted from allrecipes and the frosting is from Hershey's.  

Ingredients:
2 cups all purpose flour
1 tsp baking soda
1/4 tsp salt
1/2 cup unsalted butter, softened
1-1/4 cups sugar
1 tsp vanilla extract
2 large eggs, room temperature
1 cup low fat sour cream
2 mashed bananas
1 cup semi sweet chocolate chips

Frosting:
1/2 cup unsalted butter, softened
3/4 cup hershey's cocoa powder
3 cups confectioners sugar
1/3 cup heavy cream

Directions:
Preheat oven to 350 degrees.  Spray a 13" x 9" baking pan with PAM.  In a small bowl combine the flour, baking soda and salt.

In a stand mixer with a paddle attachment cream together for 4 minutes butter and sugar.  Add vanilla and eggs and mix until combined.


Add sour cream and bananas and mix again.


Add flour mixture and mix.  Stir in chocolate chips.  Pour into prepared pan.  Bake for 22-25 minutes or until toothpick in center of cake comes out clean.


While cake is cooling make frosting.  With a stand mixer combine butter and cocoa.  Alternatively add 1/3's of  confectioners sugar and heavy cream mixing between additions.  Frost cake.  Cut into squares.
