My husband's favorite thing to do when he is not working is to fish for striped bass from the beach. This week he decided to take a fishing vacation to Montauk, New York on the Long Island Sound with some of his fishing friends. They call Montauk the Surfcasting Capital of the World. It sounds a little crazy but I have seen the sign. I made these cookies for his trip along with a batch of his favorite chocolate chip cookies.
No cookies made the trip home.
Ingredients:
1-1/2 sticks softened unsalted butter
3/4 cup brown sugar
1/2 cup granulated sugar
2 eggs
2 tsp vanilla
2 cups oatmeal (quick oats kind)
1 diced apple (peeled)
1 cup flour
3/4 tsp baking soda
3/4 tsp cinnamon
1/4 tsp nutmeg
1 cup Kraft caramels, chopped
Directions:
In a large bowl mix butter and sugars until light and fluffy. Add eggs and mix one at a time. Add vanilla.
Whisk together flour, baking soda, cinnamon and nutmeg. Add to butter/sugar mixture.
Stir in oatmeal. Add peeled and chopped apple.
Add chopped caramel and stir. Preheat oven to 350 degrees. Cover a baking sheet with parchment paper or when the caramels melt they will stick to the cookie sheet. I know this from a bad experience. Scoop out dough with an ice cream scoop or cookie scooper onto cookie sheet.
Bake about 12-13 minutes or until golden brown.
