Happy Thanksgiving Eve! There's nothing better than having the whole family together. That's what is happening tomorrow and it should be fun. There will be 17 of us but everyone is making something so I won't have to get crazy making all appetizers, side dishes, and desserts myself. I've made this relish for years. Some of my family loves this with the fresh berries and oranges and the other half I will just open a jar of the jellied cranberry sauce for. No matter what kind of cranberry you like with your Thanksgiving dinner enjoy your day and take a minute to remember all that you have to be thankful for.
Ingredients:
1 cup granulated sugar
1/2 cup water
1/2 cup orange juice
4 cups cranberries
2 clementines, peeled and sectioned
Directions:
Pour fresh cranberries into a colander. Rinse with cold water, discarding the soft or damaged cranberries. In a medium sized pot add sugar, water and orange juice. Cook until sugar is dissolved.
Add cranberries and clementines and stir. Boil until cranberries pop and some liquid boils out, about 10 minutes. Pour into dish and refrigerate. This should be made a few hours ahead of time so it can chill. The relish is perfect in a gobbler sandwich the next day.
