Mrs. Fields Eggnog Cookies



It's eggnog time of year.  Last year I made these eggnog muffins.  This year I decided to try some frosted cookies.  This recipe is from a recipe copycat site.  I have never had Mrs. Fields eggnog cookies but I am sure they are delicious just like these cookies.  Have a great weekend.  

Ingredients:
2-1/2 cups flour
1 tsp baking powder
1/2 tsp cinnamon
1/2 tsp nutmeg
1-1/4 cups sugar
6 tbsp unsalted butter (original recipe calls for 3/4 cup salted butter)
6 tbsp salted butter
1/2 cup eggnog
1 tsp vanilla
2 egg yolks

Preheat oven to 300 degrees.

In a medium bowl combine flour, baking powder, cinnamon and nutmeg.  Mix well with a whisk and set aside.

In a large bowl, cream butters and sugar with an electric mixer.  Add eggnog, vanilla, and egg yolks and beat at medium speed until smooth.




Add the dry ingredients and beat a a low speed just until combined.


Drop by rounded teaspoons onto ungreased baking sheets 1" apart.


Bake cookies for 20-23 minutes or until bottoms turn light brown.  Remove from cookie sheet to cool before frosting.

While cookies are cooling, make eggnog frosting.

3 cups confectioners sugar
1/4 cup unsalted butter at room temperature
1/3 cup eggnog (or more if needed)

In a small mixer bowl, beat confectioners sugar and butter until well blended.  Gradually beat in eggnog until frosting is smooth.



Frost cooled cookies and sprinkle with a little bit of nutmeg.

  1. I have never made Eggnog Cookies before but saw a recipe on Pinterest and put it on my list to make this week. However, your recipe looks better than the one I saw so I am going to make this one instead :) Can't wait to try them!
