Skillet Chocolate Chip Cookie


Happy Presidents Day! Some of you lucky people probably have today off from work.  Unfortunately for me I don't work for a bank or the stock exchange or the post office or a company that gives a bunch of holidays off, so I will be working today.  It's too cold to do anything fun outside anyway so I will stay inside in my office, with the heat turned up, trying not to eat this whole cookie by myself.  I pinned this a few weeks ago from Bakers Royale which she adapted from Cooks Illustrated 2009.  She is an amazing photographer and all her desserts look delicious. For some reason my iron skillet is 13-5/8" when the recipe called for a 12" one so I made a few adjustments to the original recipe.  You can actually taste the browned butter flavor.  This was put together in a few minutes so if you want a quick dessert this is it!

Ingredients:
2 cups all purpose flour
3/4 tsp baking soda
16 tbsp unsalted butter
1/2 cup granulated sugar
1 cup packed light brown sugar
1 tsp salt
3 tsp vanilla extract
2 large eggs
1-1/4 cups semisweet chocolate chips

Directions:
Preheat oven to 375 degrees.  Adjust oven rack to middle position.   Lightly butter 13-5/8" skillet or similar size.  Whisk together flour and baking soda and set aside.  Heat 12 tbsp of unsalted butter in a skillet over medium heat until melted.  Continue stirring for another 1-3 minutes until brown and nutty in aroma.  Remove from heat and pour heated butter through a sieve into a heat proof bowl.  Stir in remaining butter until completely melted.


Add both sugars and salt and vanilla to bowl with butter and whisk until fully combined.


Add both eggs and whisk until mixture is smooth and no sugar lumps remain.


Let mixture stand for 3 minutes and then whisk again for about 30 seconds.  Repeat letting it stand and whisking two more times.  Stir in flour mixture until combined.  Add chocolate chips and combine again.


Press cookie mixture into prepared skillet. 


Bake for 15-17 minutes or until golden brown and still puffy.  Cut into slices. 


It can be served right out of the oven topped with ice cream/hot fudge/whipped cream or plain and cooled is fine also.
