Spinach Artichoke Grilled Cheese

I love anything spinach artichoke so when I came upon a recipe for it in sandwich form I knew I would enjoy it. What can I say about this version of grilled cheese? Well for starters it's creamy, cheesy, warm and delicious. Just imagine spinach and artichoke dip in between two buttery crispy slices of bread. I made this last week for a friend and I and paired it with a green side salad which gave us the perfect lunch.

Ingredients for 2 Sandwiches:
4 Slices Sourdough Bread
3 Cups Baby Spinach
2 Garlic Cloves - Minced
1/2 Cup Artichoke Heart - Diced
2 Tbsp Fat Free Sour Cream
1 Tbsp Olive Oil
1 Cup Shredded Mozzarella & Provolone Cheese
2 Tbsp I Can't Believe it's not Butter

In a large skillet over medium heat, add the olive oil. When the pan is hot, saute the spinach and garlic until wilted, about 2 minutes. Wait till all of the liquid has evaporated and then add the artichoke hearts.
Season with salt and pepper and saute another minute or two until the artichoke hearts are warm. Take the pan off the heat and transfer everything to a small bowl.
Add in the sour cream, and mix until creamy and well combined.
Now it is time to construct the sandwiches. Take out the bread and match up the slices so they are the same size. Spread half of the spinach artichoke mixture on one of the slices of bread. Spread the rest one of the other slices.
Sprinkle each slice of bread on top of the spinach artichoke mixture with the shredded cheese. I found a blend of Mozzarella and Provolone cheese that was pre-shredded at our food store intended for pizza. Top the cheese with the remaining slices of bread.
Lightly butter both sides of the bread and bring the pan back up to medium heat. Place the sandwiches down in the hot pan. Allow the bread to brown and the cheese to melt for 2-3 minutes before flipping the sandwiches over. Cook for another 2-3 minutes on the 2nd side. Serve immediately.

  7. I love finding new grilled cheese recipes. I've never heard of this one, but spinach and artichoke are so delicious together. I can't wait to try this! It sounds so good!
