Spinach & Sun Dried Tomato Dip

The summer is speeding along as it always does. Our adorable almost 4 month old grandson will be baptized this Sunday and our family will be coming from all over so we will be having a very fun weekend.  This recipe was adapted from Chef In Training.  It was very easy to make and so delicious.  This is perfect for any picnic or BBQ.   We enjoyed this at our Father's Day party.

1 block 8 oz softened cream cheese
1 10 oz package frozen chopped spinach thawed
1/3 cup sundried tomatoes chopped plus more for garnish
1/3 cup shredded parmesan cheese
1 tbsp chopped garlic

2 red peppers sliced
2 carrots sliced
2 stalks celery sliced
1/2 loaf french bread sliced

Mix all ingredients together in bowl.

Place in serving dish.

Garnish with additional chopped sun dried tomatoes and serve with dippers like peppers, carrots, bread,
celery, etc.

  2. Oh my, spinach dip is my favorite and I love your addition of sun dried tomatoes--it seems like the perfect summer dip. Thanks for sharing! PS: I found you through the Wonderful Food Wednesday linkup :)

  3. That just seems like a great combination. It would be wonderful with some sweet hawaian bread rolls.
