Coconut Banana Bread w/Lime Glaze


So I'm going to be a grandma again!  My adorable almost 6 month old Owen is going to have a girl cousin in a few months.  We are going to have such fun with two babies.  This recipe is from www.cookinglight.com from 2007 and is one of their top 20 recipes of all time.  I am always looking for a variation on banana bread and since I am a coconut lover this was perfect.

Ingredients:
2 cups flour
3/4 tsp baking soda
1/4 tsp salt
1/4 cup butter softened
2 large eggs
1-1/2 cups mashed bananas (about 3)
1/3 cup plain low fat yogurt
1/2 tsp vanilla
1/2 cup flaked sweetened coconut

Topping
1/3 cup flaked sweetened coconut
1/2 cup powdered sugar
1-1/2 tbsp fresh lime

Preheat oven to 350 degrees.  Spray 9 x 5 loaf pan with PAM cooking spray.

Combine flour, baking soda and salt and stir to mix.

Mix together sugar and butter in a large bowl.  Beat with a mixer at medium speed until well blended.  Add eggs one at a time beating well after each addition.  Add banana, yogurt and vanilla and beat until well blended.  Add flour mixture and beat at low speed until moist.


Stir in 1/2 cup coconut.



Spoon batter into prepared loaf pan.  Bake at 350 for one hour or until toothpick inserted into center comes out clean. Cool in pan for 10 minutes.  Combine powdered sugar and juice. Drizzle over warm bread and sprinkle with coconut.

Enjoy!!
