Slow Cooker Honey Sesame Chicken

I have been using my slow cooker a lot lately.  I love putting everything all together earlier in the day and then not having to worry about starting dinner at 6 when I'm not really in the mood.  This recipe is adapted from which was found on pinterest.  She used chicken thighs which I substituted for chicken breasts.  It had a little kick to it from the red pepper flakes which I loved but you could omit that if necessary.   Enjoy the beautiful fall weekend!

3 boneless skinless chicken breasts
salt and pepper
1 cup honey
1/2 cup soy sauce
1 medium onion, diced
1/3 cup ketchup
2 tbsp olive oil
3 cloves garlic minced
1/4 tsp red pepper flakes
4 tsp cornstarch dissolved in 6 tbsp cold water
1/2 tbsp sesame seeds
3 scallions, chopped

Lightly season chicken with salt and pepper and put into slow cooker.

In a medium bowl combine honey, soy sauce, onion, ketchup, oil, garlic and pepper flakes.  Pour over chicken and cook on low for 5 hours.

Remove chicken from crock pot and leave sauce.  Dissolve 4 tsp of cornstarch in 6 tbsp of cold water and pour back into crock pot.  Stir to combine sauce.  Replace lid and cook sauce on high for 30 minutes until slightly thickened.  Shred chicken into bite size pieces and put back into crock pot to mix with sauce.  Place chicken mixture over cooked rice and sprinkle with sesame seeds and chopped scallions.
