Vegetable Quesadillas



I want to thank Dawn at http://www.vanillakitchen.blogspot.com/ for the Funky Chunks Soap Co. gift basket I won from a contest on her blog.  You should check her out.  She has some delicious looking recipes that you might want to try. I can't wait to make her cake filled peanut butter cups.  

I have a cute red quesadilla maker and I like to use it whenever I can.  This is such a good dinner for a weekday work night.  Add a little side salad if you feel you are not having enough vegetables in the quesadilla.  The more meatless meals I have, the more I like having them. They just seem lighter and better for you. Sam is coming home from school soon so we will be having more meatless meals.    

Ingredients:
2 tbsp olive oil
1 package sliced fresh mushrooms, chopped
1 small zucchini, chopped
12 cherry tomatoes, cut in half
1/2 orange bell pepper, chopped
1/2 medium onion, chopped
1 tbsp fajita seasoning
1/2 cup canned corn kernels
1/2 cup black beans
8 flour tortillas
Shredded cheddar cheese

Directions:
Heat olive oil in skillet over medium heat.  Add mushrooms, zucchini, bell pepper, and onion.  Saute about 5 minutes. Add fajita seasoning.  Mix in tomatoes, corn and black beans.  Cook for another minute to heat through.  Remove from heat.


Spoon vegetable filling in middle of tortilla and sprinkle with cheese.  Put in quesadilla maker.


Top with another tortilla and close lid to quesadilla maker.  Slide onto plate when tortilla is browned to your likeness.  Cut into triangle sections with pizza cutter or knife.  Serve immediately with salsa.
