Oatmeal Crumb Apple Pie


Apple pie is one of the most quintessential American dishes especially during the fall. There are so many different ways to use apples in fall desserts, but this pie is one of my favorites. The sweet warm apples in the buttery crust and a crunchy topping with creamy cold vanilla ice cream makes for the perfect bite. This pie is also special because it is a weight watchers recipe so you can enjoy it without the guilt of having a decadent dessert.

Ingredients:
4 Apples - Peeled, Cored and Thinly Sliced
1 Frozen Pre-Made Pie Crust
1/2 Tsp Cinnamon
1/4 Cup Sugar
1 Tbsp Corn Starch
1/2 Cup Oat Fashion Oatmeal
5 Tbsp Flour
3 Tbsp Sugar
3 Tbsp I Can't Believe it's Not Butter - Melted

Start by preheating your oven to 400 F. Take your frozen pre-made pie crust out and set it aside. Wash and peel all of your apples. If you have an apple corer use it, if not cut your apple around the core in 4 sections and then slice the apples thin.
Add the 1/4 cup of sugar, cinnamon and corn starch to the bowl with the apples. Toss the apples in the dry ingredients to completely coat them in the mixture. When they are fully coated pour the apples into the pie crust and set aside.
It is now time to make the crumble. In a small bowl combine the flour, oatmeal and remaining sugar. Melt the margarine or butter on a low power in your microwaves for about a minute. Pour the melted butter into the bowl of dry ingredients and mix everything together.
Top the apples with the moist crumb mixture making sure to spread it out over the entire pie. Bake the pie until the apples are tender and the crumb topping is golden brown about 45 minutes.
If you are like me and you like eating warm pie with cold vanilla ice cream. Leave about 10 minutes off of the total baking time and put the pie back into the oven for its final minutes of cooking. Let cool 30 minutes before slicing. Then top with ice cream and serve.
