Banana Chocolate Chip Oatmeal Cookies



These are a combination of a chocolate chip cookie and an oatmeal cookie combined with some mashed bananas.  Yet another way to use my too ripe bananas so I don't have to throw them away.

Ingredients:
2-1/4 cups all purpose flour
1/2 tsp salt
1 tsp baking soda
1/2 cup unsalted butter, softened
1/2 cup sugar
1/2 cup brown sugar
1 egg
1 tsp vanilla extract
3 bananas, ripened and mashed
1-1/2 cups old fashioned oats
1-1/2 cups semi sweet chocolate chips

Directions:
Preheat oven to 375 degrees.  Add flour, salt and baking soda into medium sized bowl and whisk together.  Set aside bowl.  In a separate bowl mix softened butter and both sugars on medium speed until well combined.  Add egg, vanilla and mashed ripened bananas.  Mix until blended.


Add oats and stir.


Add chocolate chips and stir.


Drop onto an ungreased cookie sheet by the tablespoon.  Cook for 10-11 minutes until cookie has started to brown.  Remove from cookie sheet onto wire cooling rack.
